It has been one of the most busiest Christmas ever this year in Melbourne. In fact, during the whole December restaurants were full booked. Hence, I did not have much free time to express myself about delicious food and wines that I ate and drunk as “Pinot Noir”. Mostly, right now all of you who follows me. Certainly, knows that I am a super busy chef, who gives everything. To bring the best dining experience for any of you, from my website Samurai Gourmet. And for sure, for the people from Melbourne that visit the spot where I work.

However, after my three weeks holiday from my restaurant. Now again, I am free to give what I do better that is dining with delicious food and beautiful wine. In short, to be share it with you guys, due to I really love to do this.

First of all, in New Zealand quality has skyrocketed in the past 30 years. Building its reputation around the bold, pungent Sauvignon Blancs in the 1990s. But since that time, Pinot Noir has been gaining momentum. Therefore, it is this medium-light bodied, red wine that I tried and paired with beautiful food.

In fact, I paid $26 AUD for this Pinot Noir 2019, from Oyster Bay, New Zealand. And I felt like I won the lottery, because is a very nice red wine for a fair price. Besides, it’s very easy going wine with dry texture and a light bodied style. That has given to me one of the most beautiful dinner at home. Further, I did not have to splurge my money, looking for an expensive wine. In short, I found a very cheap Pinot Noir with great value and for me that is so important.

Pinot Noir Pairing with Food

First of all, the world’s most popular light-bodied red is loved for its red fruit and spice flavours that are accentuated by a long, smooth, soft-tannin finish. In short, this red is gonna be pairing with its all best food matches.

Comté /Swiss cheeses match nicely with Pinot Noir.

A versatile red wine for food pairing given the higher acidity and lower tannin. Pinot Noir tastes like it was meant for duck and chicken. Besides, other meats such as pork and vegetables as mushrooms.

Duck is a perfect match with Pinot Noir because this red wine contrasts the fat with the high acidity.

Chicken is not supposes to consume with full bodied reds, that’s why Pinot Noir is the best choice as much as full bodied whites.

Pork has a lot of fat therefore high acidity reds and whites such as Pinot Noir and Alsatian Riesling match beautifully. Although, even Syrah can be a good pairing.

Other Meats Pairing

Burger and Pinot Noir are great together.

Lamb can also match with Pinot Noir but chilled is better.

Terrines are very light entrees but lightly fatty, hence Pinot Noir again is a good choice for these dishes.

Seafood Pairing

Salmon is a very fatty fish that’s why acid reds and whites such as Pinot Noir and Sauvignon Blanc from New Zealand go magnificent with it.

Cod is another fish that contains a lot of fat, so for this reason is not crazy to be paired with this light-bodied red.

Mushrooms was meant to be consumed beside a Pinot noir, they match very nice.

Samurai Gourmet Pairing Pinot Noir with Food

Surely, I don’t drink wine without delicious food. Well, it’s sort of my rules because I think food and wine taste better together. That’s why, I had to make my own dishes to match them nicely. So, I made two different dishes with chicken because Pinot Noir goes well with it.

Chicken, Olives, Tomato cherries & Oregano

It’s almost a puttanesca sauce but without anchovies. Plus, chicken and oregano. Besides, of course garlic to help to enhance the flavours. In fact, this dish was delicious, the sauce produced by cherry tomatoes combine with garlic, oregano and olives is glorious. In short, it’s incredible and definitely the best choice to match it with this Pinot Noir.

Chicken, Broad beans, Rosemary & Lemon

I wanted to make another dish to match with this red wine, just because there are many people that don’t like olives or tomatoes, ect. That’s why, I am pretty sure you understand my point, why I did a second option. Indeed, this dish is lighter in flavours but very nice anyway. Rosemary, broad beans are the stars here. Besides, lemon juice gives a nice and fresh touch. Moreover, I put chilli and parmesan cheese but are optional. Although, if you like a pinch of spicy in your food as I do, and also wanting to enhance the flavour, Parmesan cheese can help to do that. Therefore, definitely your food is gonna taste better.

  1. Pinot Noir is so versatile. If we don’t want to order a red and white to go with a meal it often can blend with the light and heavy dishes. Thanks for the ideas on Australian variety.
