ORECCHIETTE WITH POMODORO AND DRIED RICOTTA

First of all, orecchiette is a typical Italian pasta from the region of Puglia to the South of Italy. Besides, its name came from “small ears”, duo to its similitud with an ear shaped. Although, the traditional dish in Puglia is the orecchiette with cime di rapa (broccoli rabe). On the other hand in Salento, it is so typical the orecchiette with tomatoes sauce and dried ricotta cheese.

It is made with durum wheat and water but rarely are used eegs. Duo to, that eggs were considered of great value. In other words, the poverty of the citizens avoided to use expensive ingredients for their meals. For economical reasons. Therefore, the Puglian cuisine is called cuisine of the poor. Where cheap food took an important role for the people.

In fact, orecchiette is the most typical pasta in Puglia. Consequently, widespread to Salento in the city of Lecce.
